Newcastle Distilling – Victor Hingston #6 – Single Malt Light Peat, Cask Strength Whisky
Victor Hingston Moy is the distiller’s late grandfather, best friend, idol and mentor. This lightly peated 5yo uses a blend of voyager craft malt and peat-smoked malt and on-site spring water. Aromas of oak, smoke and toffee, flavours of young peaches, fresh strawberries, toffee sweetness and a hit of smoke on the finish. Aged in 100L port barrels stored in NSW’s Snowy Mountains and in the ACT, then to its final home in Newcastle. The movement and temperature variations give this barrel a unique mix of environments, giving that perfect level of ageing. 59% ABV.
Chief’s Son Distillery – 900 Standard Single Malt Light Peat Whisky
A beautifully smooth, full bodied, warm, rich red, single malt whisky is crafted from a base and a specialty malt, including a small percentage of peated malt to impart a deep caramel flavour, all matured in ex-fortified French oak barrels. A nose of sweet fruit, sherry and roasted nuts, baked toffee, complex sweet leather and oak. The taste is of full sherry, balanced oak and sweet barley, oily and complex with a late caramelised peat. This whisky will leave a medium to long finish.
Dobson’s Distillery – Old Reliable Single Malt Light Peat Whisky
A very lightly peated, triple distilled malt that has been matured in French oak casks that previously held shiraz, as well as ex-Madeira casks. Golden Promise barley is employed in the mash. Pours a slightly pale, medium amber / gold colour and has frail scents of creamy soda, vanilla custard and hints at pineapple pudding. Lighter-styled, as per entry level Canadian ryes or Irish blends, this is graceful and silky in the mouth with vanilla wafer, light fruit’n’nut chocolate and gentle cinnamon / pepper warmth. Turns drier to finish with subdued vanilla custard notes in the aftertaste. 42% ABV
