Pink Ginberry

For the Raspberry Simple Syrup

1 cup raspberries
1 cup water
1 cup sugar

For the Cocktail

50ml Pink Gin, preferably a Sloe Gin
40mls raspberry simple syrup

How to….

Place simple syrup ingredients in a small saucepan over medium-high heat and bring to a boil. Lower heat and let simmer for 10-15 minutes, or until the syrup has reduced by half. Take off heat, strain mixture, and let cool completely. Cover the inside of the rim of the glass with the raspberry sugar syrup. Add the pink gin to the glass with a dash of syrup, and top with chilled Prosecco, garnish with raspberries.
